St. Augustine, Florida (JUNE 2008) Chef/Restaurateur Jean-Stephane Poinard, owner of newly opened Bistro de Leon in St. Augustine, is launching his offsite catering company ‘The Flying Bistro’. Managing the catering division is Executive Chef Allen Suggs, previously associated with the Ritz-Carlton, Amelia Island and Sterling’s Café in Avondale as Executive Chef. No stranger himself to fine cuisine ‘on the go’, Suggs has also been featured in ‘Taste of the NFL’ cookbook as representative chef for the Jacksonville Jaguars.
The Flying Bistro has something unique to offer clients that can accommodate a 29’ Airstream Vehicle that comes to the party outfitted with every culinary amenity; it’s self-contained for cooking and serving large numbers of guests. The food can range from authentic French cuisine to fusion Asian or southern – tailgate style or cocktail party.
As a member of the exclusive Les Toques Blanches Lyonnaises, Poinard is one of the honored chefs invited into the rare fraternity of only 100 members. The organization is led by Paul Bocuse, recognized as the finest chef of the 20th Century and ambassador of modern French cuisine. During their lifetime, these chefs have been held in high regard for their contributions to the culture of the country.
Carrying the integrity forward from the farmers and fishermen who nurture their produce and fresh seafood, Poinard’s and Suggs’ dishes taste like the ingredients that they carefully select daily. The kitchen is alive with the surprises of each party’s themed menu – so they’re ‘off and flying’.
In his alluring accent Poinard exclaims “When you cook, you have to love people. My cuisine is like a symphony; I cook to the rhythms of music – and it’s fun. I don’t make my food adapt to me…I get a feeling for the food that’s the freshest I can procure. The Flying Bistro catering menu changes with each event, serving only the best of the best.”
