Kingfish Grill - Winner of Minnow Menu Contest
Kaylee Wilken’s Cinnamon Red Applesauce
9-YEAR OLD ENTERS MINNOW MENU CONTEST A Young Chef-in-the-Making Wins St. Augustine Vacation
St. Augustine, Fl (January 5, 2008) Kaylee Wilken had to enter the ‘minnow menu’ contest. She and cooking go hand-in-hand. When her grandmother Karen Hopman saw the Kingfish Grill restaurant’s recipe contest in her local Florida newspaper, she shared it with 9 year old Kaylee who lives in Goshen, Indiana. With only 4 ingredients, her healthy recipe for Cinnamon-Red Applesauce won the Grand Prize – a trip to St. Augustine, dinner for 4 at the Kingfish Grill and having HER recipe featured on the menu throughout the year.
The St. Augustine restaurant sponsored a Kids Cooking Contest to add a new healthy choice item that kids really enjoy. Kingfish Grill’s owner/general Manager, Beth Mincher, realized that cooking is fun and educational; making their own food helps children develop confidence in the kitchen. And it might even turn a fussy eater into an adventurous one.
Reviewing hundreds of healthy recipe submissions, Kaylee’s winning recipe follows:
Kaylee’s Cinnamon-Red Applesauce
7 Cups (64 ounces) unsweetened applesauce. Use either unsweetened home-made applesauce or store bought applesauce (fat-free)
1 (14 oz) package cinnamon imperials ‘red hots’ (fat-free)
2 t. ground cinnamon
1 dash nutmeg
Place all ingredients in a large saucepan. Heat over medium heat, stirring often. When applesauce begins to bubble, reduce the heat and continue to stir until all of the red hots are dissolved.
Serve warm. Applesauce makes a beautiful presentation!

“I’m so excited about winning the minnow menu contest. I love to cook for my family and I hope that I can become a chef when I grow up” admits Kaylee.
