New Cookbook is a Heartwarming American Collection


St. Augustine, Florida (Summer 2007) Jewell Kutzer, nationally known speaker/entertainer and also known as the Mayberry Momma, debuts her new book “Mayberry Momma’s Food for the Soul & Body.” It's a heart-warming combination of the Mayberry Momma's memories of growing up in Mount Airy, N.C., the small town that she and Andy Griffith shared, along with the results from her nationwide contest, which brought in a "passel of good recipes for great food."

The book’s emphasis on "home cooking" takes the reader back to an era in the South and a generation that loved to cook! Add in a generous helping of Carolina mountain wisdom, Mayberry Momma style, and you've got a tasty offering. Kutzer's new book is a natural follow-up to her first book, Memories of Mayberry, which explored the influence of their hometown on the fictional TV town.

The Mayberry Momma’s reason for including food for the soul as well as the body is summarized in an excerpt from her book prologue: “Food and philosophy were dished out in equal portions at the dinner table of my youth. Sometimes it was a particular dish that was soul satisfying; then again, it was the turn of a phrase that filled me up.”

Chapter Marvelous Meatloaf
Chicken Cordon Bleu
Saucy Mini-Meat Loaves
Candace McMenamin
Lexington, South Carolina

Ingredients :
1 ½ pounds ground chicken or turkey
½ C. grated carrots
1 small onion, chopped
2 eggs, beaten
1 C. Italian-flavored bread crumbs
1 (14.5 oz) can petite diced tomatoes, drained
6 oz. thinly sliced deli ham
6 oz. thinly sliced provolone cheese
1 ½ C. prepared spaghetti sauce
Garnish: parsley sprigs, if desired

Preheat oven to 350 degrees.
In a large bowl, combine ground chicken, carrots, onion, eggs, bread crumbs and tomatoes. Mix well. Shape into 6 equal mini-loaves.
Divide each loaf in half lengthwise. Evenly place ham and cheese on surface of bottom half of loaves. Replace top of loaves. Seal seams.
Place on a 15 x 10 baking pan that has been prepared with non-stick spray. Bake in oven for 45 minutes or until meat thermometer inserted in middle of loaves registers 160 degrees.
Heat spaghetti sauce in microwave safe bowl 2 minutes or until heated through.
Place loaves on serving platter and garnish with parsley sprigs, if desired. Have heated sauce available to pour over loaves, as desired.
Serves 6.
I created this meatloaf recipe for all my “highfalutin” friends who think they have to have some fancy French food. I serve it up in an elaborate style and they don’t even know they’re eatin’ meatloaf. I hear comments like, ‘Oh my dear, this is so divine,’ and ‘I must fix this for my next garden party!’ Shucks, it’s just doctored up ole’ meatloaf. But it tastes wonderful and is a breeze to make. I think Aunt Bee would be proud to serve it!
